Celtic Wheel of the Year:
The Celtic Wheel of the Year is a cycle of eight festivals that mark the natural cycles of the year and the changing seasons. The Wheel of the Year views the change of each season being celebrated during the High Holy cross-quater days: Samhain, Imbolc, Beltane, and Lughnasadh. The midpoints, are the lesser sabbats and are the peaks and mid-points of each season: Winter and Summer Solstice as well as Spring and Autumn Equinox.
Dingle Distillery launched a series of whiskies to honour this cycle and have so far, released 5 whiskies following the rhythm of the seasons, equinoxes, and solstices. The first edition honoured the Celtic festival of Samhain, followed by La Le Bride Single Malt, Bealtaine Single Pot Still, Lunasa Single Malt, andGrianstad An Gheimhridh.
Conocht An Earraigh Single Malt
The sixth launch is the Conocht An Earraigh Single Malt, honouring the Spring Equinox, when night and day align and the energy of the earth comes into balance. This is a time of vitaliy and growth, when young livestock are developing and the fields that were recently fallow begin to flourish into rich pastures. At this time of year, Dingle’s rolling landscape springs into life as the farmland of the peninsula fills with a variety of crops and livestock, with hopes for a long and warm summer ahead.
Matured in former Bourbon casks with a Cabernet Sauvignon finish. Cónocht an Earraigh expresses aromas of ripe plums, blackberries dusted with icing sugar, toasted almonds and muscovado sugar. On the palate it brings suggestions of rich red fruits, subtle spice, gingerbread, Fruit tarte and treacle toffee. The finish leaves a lingering mouthfeel with sweet fruits balanced with dry tannins.
